Dinnertime

Last week we had some friends over for dinner and had a really great meal I must say. And the best part was that it was really easy! We had lettuce wraps and some fried rice. We found a recipe for fried rice on you tube of all places :) The only other thing we needed was maybe a vegetable to make the meal more balanced, but it turned out great so thought I'd share it.

Lettuce Wraps
diced chicken
green onions
Kung Pao Sauce

Mix chicken, onions and sauce over medium heat.

Then do Rice noodles/Bean threads separately: This is the fun part!

Fill a small sauce pan about half way with veg/olive oil, heat on medium heat or more. Drop small handful of noodles into the oil and watch them pop up-It gives the wraps extra crunch.

Finally, use Iceberg lettuce and try to keep the pieces as big as possible.


Fried Rice




2 TBL veg oil in pan
add chopped carrots
2 eggs
pork, or chicken, diced
already cooked rice
1 TBL soy sauce
1 tsp garlic
1 tsp salt
2 TBL sugar
celery
green onions

Thats all!! Have fun.
